Italian Comfort - Chicken Parmigiana
Hola familia!! Miss me much?? I have
been M.I.A lately because I have been working on some new things for
the granola bars and Latin spices; so I took a mini break from blogging
to get everything organized and running smoothly again. Now, I am back
and I have a simple, delicious Chicken Parmigiana recipe for you all!
Originally, I had planned to make Chow Mein to get rid of some chicken
breast; but my friend and lovely ex-coworker posted a picture of Chicken
Parmesan and I instantly kicked Chow Mein to the curb and decided to
make Chicken Parmigiana. Also, this gave me the opportunity to try out
the black garlic Bazaar Spices
gave me on my last visit to their new shop at Union Market in D.C. Now
don’t get me wrong, I was skeptical to use the black garlic at first
because it looks like it needs to be thrown out; but what kind of cook
would I be if I wasn’t a little daring :D. Now, I am so glad I tried it.
The black garlic added a sweet but savory richness to the dish; and it
does not come with that pungent odor raw garlic loves to emit. Also,
rumor is that black garlic packs twice as much antioxidant than raw
garlic; therefore, in all reality, black garlic elects this dish as
healthy because it counteracts the starchy noodles and pan-fried
chicken…not really but sounds pretty good to me. So, go ahead and try
