Test Drive: Bamboo Infused Rice

I love exploring new ingredients so when Monica from Bazaar Spices suggested that I try some bamboo infused rice, my curiosity was peaked.  The beautiful peridot-green pearls looked more like gems than food and I was excited to see what I could do with them.






Smelling the rice, there is a sweet, grassy aroma that made me want to bring out the sweetness and the freshness. I decided to cook mine in coconut milk to bring out the natural sweetness. I cooked it in a rice cooker with the same 2:1 ratio as any other rice. It came out creamy and smooth with a wonderful dessert-like smell.

To bring out the fresh green flavor, I added fresh green peas and chopped parsley. I didn't want to overpower the delicate flavor of the rice so I kept it simple. A little salt and pepper finished it off.

What we ended up with was a delicious side dish that even my picky toddler devoured. I'll definitely keep this recipe for dinner parties. It tastes good and it looks so pretty on the table!
