We're really into putting things on toast - eggs, leftovers, spices, spices on leftovers with an egg...you get the idea. In honor of Snoopy's Thanksgiving feast of ice cream sundaes, popcorn, toast, jelly beans, and pretzel sticks, we came up with a few ways to put a little Thanksgiving on your toast. (We also did this to popcorn.)
- Sweet potato puree: Blend together cooked sweet potatoes with some salt, nutritional yeast, and fish herbs (an herbal blend reminiscent of stuffing, but arguably better). Best enjoyed warm.
- Smoked "turkey": Cook up any of our beans (try cranberry or cannellini!), then puree with a touch of applewood or Maine cherry smoked salt and turkey brine seasoning.
- Cranberry or cherry compound butter: Chop dried cranberries or cherries and stir with a touch of muscovado sugar (we love its notes of molasses) into softened butter. Store in the refrigerator.
- Pumpkin pie: Smear a thin layer of butter on bread, then sprinkle sugar cane crystals and pumpkin pie spice on top. Broil (on high) for 4 to 5 minutes, until the spiced sugar topping is bubbly and crackling.
